Nicky Slices Pizza Club Takeaway. St. Louis's Secret Detroit Style Pizza. Big disclaimer: It was the first time I ever had Detroit-style pizza. I'm a NJ pizza purist. 6.9 / 10 pizza score. We got the OG cheese for $20 base, up to $27 after mandatory tax, tip, and fee.
Light and fluffy crust with a delicious crunch around the edge. It had an uneven cheese and sauce distribution. Good focaccia, ok pizza. Doesn't cross the Flood Line.
The only way to find out about Nicky Slice, besides this article, is on Instagram. My buddy told me about it. They open up ordering on Monday night at 6 pm. They usually sell out by Tuesday or Wednesday night. Then they deliver on Thursday or Friday.
It comes pre-baked. You have to bake it yourself in three days.
Worth doing once, but probably not again for me.
Nicky Slices Experience Summary
My buddy told me about Nicky Slices Pizza Club when we started discussing my St. Louis pizza adventures.
Nicky Williams started slinging these Detroit-style pizzas during the pandemic. The only way to learn about his ghost kitchen is from Instagram. But now that you know about him, you can go to his Instagram to order.
They take orders starting Monday at 6 pm and sell out before Wednesday night, so I'm told. Even ghost kitchens keep weird hours in St. Louis.
Overall, I'd give the OG cheese pizza a 6.9 / 10. Detroit-style will probably never crack an 8 for me. This pizza had a light and fluffy crust with a crisp edge, but how they distributed the sauce and cheese created sauce pools, and the overall flavor wasn't there for me.
Part of that must have to do with the fact that you cook it at home. More on that later.
Overall, the experience of ordering off the secret menu, heating it up yourself, and trying Detroit-style make Nicky Slices worth trying once if you live in St. Louis. For the $27 price tag, the ~36 oz pizza won't be a regular order for me. Compare that to ~$22 for picking up a 34.4oz pizza from Pie Guy. Right inline price-wise without the planning.
The Food At Nicky Slices
Like all my pizza reviews, I stick to plain pizza. That tells you how well the pizza shop can make the underlying pizza. I try to keep everything as apples to apples across pizza reviews.
It is also my favorite type of pizza.
For Nicky Slices, I got the OG Cheese pizza.
They have a bunch of other pizzas that are more like lasagnas or casseroles, like Mom's Spaghetti or Butter Chicken. The menu also changes frequently, so my screenshot might not be up-to-date for this week.
Nicky's OG Cheese came in at 37.7oz pre-cooked and about 36 oz post-cooking. While the menu says $20, after mandatory service fees, taxes, and tip (yes, the tip is mandatory), it came to $27. That makes it on the slightly more expensive side. Way cheaper per oz than Union Loafers pizza.
The price includes delivery, but you have to cook the pizza yourself.
On pure taste, I gave it a 6.9 / 10 pizza score. That makes it a solid pie, but not worth making it a regular occurrence. Detroit-style pizza looks, tastes, and feels more like a fancy focaccia than a true pizza.
The sauce and cheese get soupy in certain parts of the pizza while being firmer and crispier in others. The underlying sauce flavor is solid, but the consistency throws it off. It's the same for the cheese.
My favorite bites were the ones with less cheese and sauce, where everything was crispy, and the crust's oily, fluffy flavor came through. The dough would make for an excellent focaccia.
At 10" by 8", the pizza served four adults comfortably when paired with an additional salad and appetizers.
As my wife said, "You should write that everyone at The Lab said you have to try Jet pizza now to compare."
Nicky Slices Atmosphere And Miscellaneous
Nicky Slices operates out of a ghost kitchen on Instagram, so there's no formal restaurant. They open ordering to a custom menu every Monday at 6 pm until they sell out.
When they deliver the pizza, it still needs to be cooked. You get a big casserole tray inside of a pizza box. They provide a QR code for the instructions on how to heat it up. I don't have a pizza stone, but following the instructions led to what I think was a perfectly cooked pizza.
The pizza was easy to cook. It took 1 to 1.5 hours all-in to cook it based on taking it out beforehand to get to room temperature. My buddy and I had a beer while we prepped and cooked.
Delivery was also straightforward. Nicky gave me a window by text message on when it would be delivered. And then they texted me when they dropped it off.
I walked outside, picked it up, put it in the fridge, and was good to go.
The one downside to the whole process is that you need to plan your pizza dinner. You can't decide to have Nicky's on a whim on Saturday night. You have to make it an event, which makes it fun but takes out spontaneity.
Parking At Nicky Slices
They only deliver, so there is no need to worry about parking. Just make sure you're home to pick up the pizza off the stoop.
